It’s Friday and I’m feeling relaxed and recharged after a magical week in the Rocky Mountains. Beaver Creek and Vail are two of my favorite spots in the world and I’m lucky enough to have a home base in Beaver Creek just steps from the mountain and world famous slopes. On this glorious summer trip we ate at a few of my favorite spots in Vail, did a fun hike up Beaver Creek mountain and explored Leadville, the once economic center of Colorado. I’m ashamed to say, aside from the ski fence pictured above, my favorite discovery came in the form of a bubbly beverage. I’m a diet soda freak and even though it is completely passé at this point, I consume at least 2 diet cokes a day. I’m aware a healthy alternative to my diet soda habit is needed desperately and I think I found it in Colorado! While at a tasty neighborhood bakery called Avon Bakery, I discovered Bai Bubbles, a carbonated drink infused with antioxidants and superfoods. This drink is not only delicious, it’s all natural. With as much caffine as a cup of green tea, it gives you that little boost you may need as well. After an intensive Google search, I found out that Bai is not just a Colorado treasure, it can be found at your local Whole Foods or even some CVS. Try the Pineapple, Cherry and Coconut. Where to eat:
Matsuhisa – One of Nobu Matsuhisa’s exquisite restaurants is located in the center of Vail village. Try the blackened cod with miso, baby spinach salad with shrimp and the Nobu style shave ice.
Sweet Basil – A Vail classic for creative fine dining, this is perhaps the most hyped up restaurant in Vail. Good news, it lives up to its lofty reputation. The menu is always changing however you must try the Lamb when it’s available and always get the sticky toffee pudding for dessert.
Mountain Cupcakes – Owned and operated by the most adorable bubbly young lady who’s name escapes me. Best cupcakes … ever
Coyote Café – Dirty Mexican at the base of Beaver Creek mountain. Great margaritas to reward you for a long day of skiing or hiking.
The Little Diner – Aptly named after its owners, the Littles, this one counter diner makes all of your breakfast favorites and nails it every time. Watching the two chefs cook for the entire restaurant is a fun bonus!
Where to shop:
Perch – I could pack nothing and be more than happy with the amazing selection at this fairly new Vail boutique. The owner is not only sweet, she has an amazing eye and loads her store up with everything from Mother jeans to Golden Goose sneakers to my absolute favorite Sea New York tops and dresses.
Skipper and Scout – A little kid spin off of Perch, with common ownership deliveres a New York vibe in the Vail Valley. Funky brands like Gardener and the Gang and fancy ones like Stella McCarteny make this spot a must see if you have a little one.
Eye Pieces – With locations in Beaver Creek and Vail, this established boutique offers more than a satisfying array of sunglass designers. You can find a sporty Ray Ban, a fancy Chanel or go nuts and try one of their obscure luxury brands like Mykita.
